  Introduction: "The Struggle over Camellia Sinensis"

   Legend has it that China once produced 8,000 different teas. Whether or not this is an accurate figure is difficult to determine. The Chinese occasionally use numerical exaggeration to emphasize certain qualitative properties of an item. For example, the curious delicacy known as hundred year old eggs (song hua) is really the result of pickling whole eggs in lime for a mere month or two. It could be that references to the number of different teas manufactured in ancient China were overstated for mere emphasis. Yet even today the number of distinctly different teas being manufactured in China is astounding.
